I don't understand the recent fascination with tilapia. It is frickin everywhere. Not a big fan of it myself. Anyway...... check it out.

I've heard that tilapia is one of the most sustainable farm-grown fish, and that's why it has become so popular. I use it for pan frying and fish tacos occasionally and it does pretty well.
